This weekend has been manic for me, arriving home from a week in Florence there hasn’t been much time to meal plan. I settled for a quick and easy stir fry for my lunches.
In the pan is savoy cabbage, peeled carrot and sweet potato, grated Beetroot, chicken pieces and seasoned with black pepper and lemongrass. Some leftover chard and rocket was also thrown in.
Sometimes the tasty lunches are those where I just throw random things into a pan and I love how this looks like a rainbow!
