This is the original recipe I found, I adapted it but exchanging the pasta for long grain rice or the specialist pasta that is wheat and potato starch free (it was expensive so I mainly stick with rice or nothing at all and keep it veggie based).
I leave out the red pepper (Nightshade) and put a twist on it by dicing up some sweet potato as a bulker instead.
This is an easy quick meal that tends to be a go-to meal on weekends when I have been out all day and too tired to cook something more fancy. It is filling and kind to your body. Yum!
